Our syrups are rich: high fruit content, the fruit's natural acidity, pure cane sugar. No water to pay for, no mile-long list of preservatives.
In the bottle
Fruit. Cane sugar. Not much else.
Pure cane sugar — never corn syrup. The acidity is the fruit's own. Citric acid is fine, but brands that put it in every syrup end up with everything tasting the same.
One preservative, potassium sorbate, so an open bottle keeps a year at room temperature. When a recipe calls for a flavouring, we use the best there is.
No money wasted making the bottle look more expensive than what's inside it.
Local when it makes sense.
When a fruit grows here, we buy it here. It isn't always the cheapest option. It's the one that makes the syrup taste like the fruit.
Straight to the source when it doesn't.
When a fruit doesn't grow here, we go to whoever grows it, and we stay. A broker looks for a price. A grower we know looks for the fruit.
